- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1/4 cup honey
- 1 large egg
Instructions
- Preheat your oven to 400°F (200°C).
- Line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, vegetable oil, honey, and egg until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- These muffins are best served warm with butter or additional honey.
- For a sweeter muffin, increase the honey to 1/3 cup.
- You can also add 1/2 cup of corn kernels or diced jalapeños for a savory twist.
- To make them gluten-free, substitute the all-purpose flour with a gluten-free flour blend.
