  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1/4 cup honey
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a muffin tin with paper liners or grease it lightly.
  3. In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined.
  4. In another bowl, mix the milk, vegetable oil, honey, and egg until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • These muffins are best served warm with butter or additional honey.
  • For a sweeter muffin, increase the honey to 1/3 cup.
  • You can also add 1/2 cup of corn kernels or diced jalapeños for a savory twist.
