Delicious Honduran flour tortillas filled with creamy black beans and topped with sour cream.

- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 3/4 cup warm water
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 cup sour cream or crema
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Sift the flour, baking powder, and salt together in a large bowl.
- Add the vegetable oil and mix until the mixture resembles small pebbles.
- Slowly incorporate the warm water, stirring until a cohesive dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for half an hour.
- In a medium saucepan, combine the black beans, cumin, and garlic powder over medium heat.
- Stir occasionally for 5-7 minutes until the beans are warmed through, mashing gently for a creamier consistency.
- Divide the rested dough into 8 equal pieces and shape each into a ball.
- Roll each ball out into a thin circle, about 8 inches in diameter.
- Preheat a skillet or griddle over medium-high heat and cook each tortilla for about 1 minute on each side until golden.
- Wrap the cooked tortillas in a clean kitchen towel to keep warm.
- To assemble, spoon the black bean mixture onto a tortilla, drizzle with sour cream or crema, and sprinkle with cilantro if desired.
Notes
- For a spicier kick, consider adding jalapeños to the bean mixture.
- These tortillas can also be used for tacos or quesadillas.
