Description

Delicious Honduran flour tortillas filled with creamy black beans and topped with sour cream.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 3/4 cup warm water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 cup sour cream or crema
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Sift the flour, baking powder, and salt together in a large bowl.
  2. Add the vegetable oil and mix until the mixture resembles small pebbles.
  3. Slowly incorporate the warm water, stirring until a cohesive dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  5. Cover the dough with a damp cloth and let it rest for half an hour.
  6. In a medium saucepan, combine the black beans, cumin, and garlic powder over medium heat.
  7. Stir occasionally for 5-7 minutes until the beans are warmed through, mashing gently for a creamier consistency.
  8. Divide the rested dough into 8 equal pieces and shape each into a ball.
  9. Roll each ball out into a thin circle, about 8 inches in diameter.
  10. Preheat a skillet or griddle over medium-high heat and cook each tortilla for about 1 minute on each side until golden.
  11. Wrap the cooked tortillas in a clean kitchen towel to keep warm.
  12. To assemble, spoon the black bean mixture onto a tortilla, drizzle with sour cream or crema, and sprinkle with cilantro if desired.

Notes

  • For a spicier kick, consider adding jalapeños to the bean mixture.
