Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups milk chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

  1. In a mixing bowl, combine the peanut butter, powdered sugar, softened butter, and vanilla extract. Mix until smooth and well combined.
  2. Shape the mixture into egg shapes, about 1 inch long and 1/2 inch thick. Place the shaped eggs on a parchment-lined baking sheet.
  3. Refrigerate the eggs for about 30 minutes to firm them up.
  4. While the eggs are chilling, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  5. Remove the peanut butter eggs from the refrigerator. Dip each egg into the melted chocolate, ensuring it is fully coated. Use a fork to lift the eggs out and let any excess chocolate drip off.
  6. Place the chocolate-coated eggs back on the parchment-lined baking sheet.
  7. Refrigerate the eggs again for about 30 minutes to allow the chocolate to set.

Notes

  • For a crunchier texture, mix in 1/4 cup of chopped peanuts into the peanut butter mixture.
  • Try using dark chocolate instead of milk chocolate for a richer flavor.
