- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups milk chocolate chips
- 1 tablespoon coconut oil (optional, for smoother chocolate)
Instructions
- In a mixing bowl, combine the peanut butter, powdered sugar, softened butter, and vanilla extract. Mix until smooth and well combined.
- Shape the mixture into egg shapes, about 1 inch long and 1/2 inch thick. Place the shaped eggs on a parchment-lined baking sheet.
- Refrigerate the eggs for about 30 minutes to firm them up.
- While the eggs are chilling, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Remove the peanut butter eggs from the refrigerator. Dip each egg into the melted chocolate, ensuring it is fully coated. Use a fork to lift the eggs out and let any excess chocolate drip off.
- Place the chocolate-coated eggs back on the parchment-lined baking sheet.
- Refrigerate the eggs again for about 30 minutes to allow the chocolate to set.
Notes
- For a crunchier texture, mix in 1/4 cup of chopped peanuts into the peanut butter mixture.
- Try using dark chocolate instead of milk chocolate for a richer flavor.
