Ingredients

  • 1 cup coconut milk (canned or carton)
  • 1 cup sparkling water
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 1 tablespoon fresh lime juice
  • Ice cubes
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a blender, combine the blackberries, coconut milk, honey or agave syrup, and lime juice. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a pitcher to remove the seeds, pressing down with a spatula to extract as much liquid as possible.
  3. Add the sparkling water to the pitcher and stir gently to combine.
  4. Fill glasses with ice cubes and pour the blackberry coconut mixture over the ice.
  5. Garnish with fresh mint leaves if desired and serve immediately.
