- 2 cups fresh blackberries
- 1 cup coconut milk (canned or carton)
- 1 cup sparkling water
- 2 tablespoons honey or agave syrup (adjust to taste)
- 1 tablespoon fresh lime juice
- Ice cubes
- Fresh mint leaves for garnish (optional)
Instructions
- In a blender, combine the blackberries, coconut milk, honey or agave syrup, and lime juice. Blend until smooth.
- Strain the mixture through a fine mesh sieve into a pitcher to remove the seeds, pressing down with a spatula to extract as much liquid as possible.
- Add the sparkling water to the pitcher and stir gently to combine.
- Fill glasses with ice cubes and pour the blackberry coconut mixture over the ice.
- Garnish with fresh mint leaves if desired and serve immediately.

- For a frozen version, blend the mixture with ice instead of serving over ice for a slushy texture.
