Instructions

  1. Begin by gently warming the almond milk in a saucepan over medium heat, ensuring it doesn’t reach a boil. If you’re using agar-agar, sprinkle it into the warm milk and stir continuously until it completely dissolves. Take the saucepan off the heat and allow the mixture to cool down a bit.
  2. In a separate bowl, blend the almond yogurt with a few spoonfuls of the warm almond milk until smooth and creamy.
  3. Gradually incorporate this yogurt blend back into the saucepan with the remaining almond milk, whisking thoroughly to ensure everything is well mixed. At this point, feel free to add honey or maple syrup and vanilla essence for extra flavor.
  4. Pour the combined mixture into a clean glass jar or container. Cover it loosely with a cloth or lid to enable air circulation while it ferments.
  5. Set the jar in a warm, cozy spot in your kitchen, away from drafts, for about 8 to 12 hours to allow fermentation. A yogurt maker or an oven with just the light on works perfectly for this.
  6. Once the fermentation period is over, taste the yogurt to check for the desired tanginess and thickness. If it meets your preference, give it a gentle stir and place it in the refrigerator for at least 4 hours to firm up. For a thicker consistency, strain it through cheesecloth if desired.
  7. Serve your creamy almond yogurt chilled, and enjoy it plain or topped with your favorite fruits, granola, or nuts for a delightful treat.
