A delicious mushroom duxelles made with hollow log mushrooms, perfect as a savory spread or filling.
Ingredients

- 1 pound hollow log mushrooms
- 2 tablespoons unsalted butter
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon thyme, chopped
- Salt and pepper to taste
- 1/4 cup heavy cream
Instructions
- Finely chop the hollow log mushrooms and set aside.
- In a skillet, melt the butter over medium heat.
- Add the shallot and garlic, sautéing until translucent.
- Add the chopped mushrooms, cooking until all moisture has evaporated.
- Stir in thyme, salt, and pepper.
- Remove from heat and stir in heavy cream until well combined.
- Let cool before using as a spread or filling.
Notes
- This duxelles can be made ahead of time and stored in the refrigerator for up to a week.
- Great as a filling for pastries or as a topping for crostini.
