Healthy Twix Cookie Cups are a guilt-free treat that combines the flavors of chocolate and peanut butter in a delicious cookie cup.

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup natural peanut butter
- 1/4 cup dark chocolate chips
- 1 tablespoon coconut milk (or any milk of choice)
- Sea salt, for sprinkling
Instructions
- Preheat your oven to 350°F. Line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine almond flour, coconut flour, salt, and baking soda.
- In another bowl, mix melted coconut oil, maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms.
- Divide the dough evenly among the muffin cups, pressing it down to form a base.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool for about 10 minutes.
- Once cooled, add a layer of peanut butter on top of each cookie cup.
- In a microwave-safe bowl, melt the dark chocolate chips with coconut milk in 30-second intervals, stirring in between until smooth.
- Drizzle the melted chocolate over the peanut butter layer.
- Sprinkle a tiny pinch of sea salt on top of each cup.
- Refrigerate for at least 30 minutes to set before serving.
Notes
- This recipe makes 12 cookie cups.
- For a nut-free version, substitute almond flour with oat flour and use sunflower seed butter instead of peanut butter.
- For added sweetness, mix in a tablespoon of honey or agave syrup into the peanut butter layer.
