Description

Healthy Twix Cookie Cups are a guilt-free treat that combines the flavors of chocolate and peanut butter in a delicious cookie cup.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup natural peanut butter
  • 1/4 cup dark chocolate chips
  • 1 tablespoon coconut milk (or any milk of choice)
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F. Line a muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, combine almond flour, coconut flour, salt, and baking soda.
  3. In another bowl, mix melted coconut oil, maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  5. Divide the dough evenly among the muffin cups, pressing it down to form a base.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool for about 10 minutes.
  7. Once cooled, add a layer of peanut butter on top of each cookie cup.
  8. In a microwave-safe bowl, melt the dark chocolate chips with coconut milk in 30-second intervals, stirring in between until smooth.
  9. Drizzle the melted chocolate over the peanut butter layer.
  10. Sprinkle a tiny pinch of sea salt on top of each cup.
  11. Refrigerate for at least 30 minutes to set before serving.

Notes

  • This recipe makes 12 cookie cups.
  • For a nut-free version, substitute almond flour with oat flour and use sunflower seed butter instead of peanut butter.
  • For added sweetness, mix in a tablespoon of honey or agave syrup into the peanut butter layer.
