A refreshing and healthy treat made with fresh strawberries and Greek yogurt, perfect for hot days.

- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon honey or maple syrup (adjust based on sweetness preference)
- 2 cups plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 cup granola (optional, for topping)
Instructions
- In a blender or food processor, combine the sliced strawberries and honey (or maple syrup). Blend until smooth. If you prefer some texture, reserve a few strawberry slices to mix in later.
- In a mixing bowl, combine the Greek yogurt, vanilla extract, and lemon juice. Stir until well combined.
- Gently fold the blended strawberry mixture into the yogurt until fully incorporated. If using, fold in the reserved strawberry slices for added texture.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Pour the yogurt-strawberry mixture into the dish and spread it evenly.
- If desired, sprinkle granola on top for added crunch.
- Cover the dish with plastic wrap and freeze for at least 4 hours or until completely firm.
- Once frozen, remove from the freezer and let it sit for about 5 minutes to soften slightly. Lift the bars out using the parchment paper and cut into squares or rectangles.
Notes
- For a different flavor, substitute strawberries with other berries like blueberries or raspberries.
- Add a tablespoon of chia seeds for extra fiber and nutrition, or swirl in some nut butter for added creaminess.
