  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon allspice
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. In a large bowl, combine lime juice, orange juice, vegetable oil, chopped onion, minced garlic, thyme, salt, black pepper, paprika, cayenne pepper, and allspice. Mix well to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Preheat your grill or oven to 375°F. If grilling, oil the grates to prevent sticking.
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.
  5. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F. If baking, place the chicken on a baking sheet and bake for 30-35 minutes, turning halfway through.
  6. Once cooked, remove the chicken from the grill or oven and let it rest for 5 minutes before serving.
  7. Garnish with chopped fresh parsley and serve with rice or a fresh salad.
