Ingredients

  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup erythritol (or your preferred sweetener)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Cooking spray or a small amount of oil for the waffle maker

Instructions

  1. In a mixing bowl, combine the shredded mozzarella cheese and almond flour. Stir until well mixed.
  2. In a separate bowl, whisk together the eggs, erythritol, vanilla extract, baking powder, cinnamon, and salt until smooth.
  3. Pour the egg mixture into the cheese and almond flour mixture. Stir until fully combined and a thick batter forms.
  4. Preheat your waffle maker and lightly grease it with cooking spray or oil.
  5. Scoop about 1/4 cup of the batter into the center of the waffle maker.
  6. Close the lid and cook for about 3-5 minutes, or until the chaffle is golden brown and cooked through.
  7. Carefully remove the chaffle and repeat with the remaining batter.
  8. Allow the chaffles to cool slightly before serving.
