Description

Ground Beef Zucchini Casserole is a delicious low-carb dish that combines ground beef, zucchini, and cheese for a hearty meal.

  • 1 pound ground beef
  • 4 medium zucchinis, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
  4. Stir in the drained diced tomatoes, sliced zucchinis, Italian seasoning, salt, and black pepper. Cook for an additional 5 minutes, allowing the zucchinis to soften slightly.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the shredded mozzarella and cheddar cheese evenly over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Remove from the oven and let it cool for 5 minutes before serving.
