Ingredients

  • 1 pound sweetbreads
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 4 tablespoons unsalted butter
  • Salt to taste

Instructions

  1. Soak sweetbreads in cold water for 1 hour, changing the water occasionally.
  2. Blanch sweetbreads in boiling water for 10 minutes, then drain and cool.
  3. Remove connective tissue and slice sweetbreads into pieces.
  4. Marinate sweetbreads in olive oil, lemon juice, salt, and pepper for 30 minutes.
  5. Preheat grill to medium-high heat.
  6. Grill sweetbreads for 3-4 minutes on each side until golden brown.
  7. In a small saucepan, melt butter over medium heat and stir in additional lemon juice.
  8. Drizzle lemon-butter sauce over grilled sweetbreads and garnish with fresh parsley.
