- 1 pound sweetbreads
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice

Instructions
- Soak sweetbreads in cold water for 1 hour, changing the water occasionally.
- Blanch sweetbreads in boiling water for 10 minutes, then drain and cool.
- Remove connective tissue and slice sweetbreads into pieces.
- Marinate sweetbreads in olive oil, lemon juice, salt, and pepper for 30 minutes.
- Preheat grill to medium-high heat.
- Grill sweetbreads for 3-4 minutes on each side until golden brown.
- In a small saucepan, melt butter over medium heat and stir in additional lemon juice.
- Drizzle lemon-butter sauce over grilled sweetbreads and garnish with fresh parsley.
