Description

This Greek tortellini pasta salad is a vibrant and flavorful dish featuring cheese tortellini, fresh vegetables, and tangy feta, all tossed in a zesty Greek dressing. Perfect for picnics, potlucks, or a quick weeknight meal.


Ingredients

  • 1012 oz cheese tortellini, cooked and cooled
  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup feta cheese, crumbled
  • 1 red or yellow bell pepper, diced
  • Fresh parsley or basil for garnish

For the Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: Squeeze of lemon juice

Instructions

  • Cook the tortellini according to package instructions, drain, and rinse with cold water. Let it cool completely.
  • Prepare the vegetables: chop the cucumber, halve the cherry tomatoes, slice the red onion, dice the bell pepper, and halve the Kalamata olives.
  • In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper to make the dressing.
  • In a large bowl, combine the tortellini, vegetables, olives, and feta. Pour the dressing over the salad and toss to combine.
  • Chill for 20 minutes before serving. Garnish with fresh herbs and serve cold or at room temperature.

Notes

  • Feel free to add grilled chicken, artichokes, or sun-dried tomatoes for extra flavor.
