This Greek tortellini pasta salad is a vibrant and flavorful dish featuring cheese tortellini, fresh vegetables, and tangy feta, all tossed in a zesty Greek dressing. Perfect for picnics, potlucks, or a quick weeknight meal.

- 10–12 oz cheese tortellini, cooked and cooled
- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/2 cup feta cheese, crumbled
- 1 red or yellow bell pepper, diced
- Fresh parsley or basil for garnish
For the Dressing:
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Optional: Squeeze of lemon juice
Instructions
- Cook the tortellini according to package instructions, drain, and rinse with cold water. Let it cool completely.
- Prepare the vegetables: chop the cucumber, halve the cherry tomatoes, slice the red onion, dice the bell pepper, and halve the Kalamata olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper to make the dressing.
- In a large bowl, combine the tortellini, vegetables, olives, and feta. Pour the dressing over the salad and toss to combine.
- Chill for 20 minutes before serving. Garnish with fresh herbs and serve cold or at room temperature.

- Feel free to add grilled chicken, artichokes, or sun-dried tomatoes for extra flavor.
