Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup gochujang (Korean chili paste)
  • 1 cup caramel bits or chopped soft caramel candies
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a spacious bowl, beat the softened butter together with the brown and granulated sugars until the mixture is airy and light.
  3. Incorporate the eggs one at a time, ensuring each is well blended before adding the next.
  4. Mix in the vanilla extract and gochujang until everything is harmoniously combined.
  5. In another bowl, combine the flour, baking soda, and salt, whisking them together.
  6. Gradually introduce the dry ingredients into the buttery mixture, stirring gently until just incorporated.
  7. Carefully fold in the caramel bits and chocolate chips, if you choose to use them.
  8. Using a tablespoon, drop rounded mounds of dough onto the prepared baking sheet, leaving about 2 inches between each.
  9. Bake for 10-12 minutes, or until the edges turn a lovely golden hue.
  10. Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Yields approximately 24 cookies.
  • For an extra kick, feel free to increase the gochujang to 1/3 cup.
  • If you prefer a gluten-free option, simply swap the all-purpose flour for a 1:1 gluten-free flour blend.
