A delicious and easy recipe for Garlicky Sautéed Shrimp with Creamy White Beans and Blistered Tomatoes.

- 1 pound large shrimp, peeled and deveined
- 1 can (15 ounces) white beans (cannellini or great northern), drained and rinsed
- 1 pint cherry tomatoes
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes (if using) and sauté for about a minute until aromatic and golden.
- Introduce the shrimp to the skillet, seasoning them with salt and pepper.
- Cook the shrimp for approximately 2-3 minutes on each side until fully cooked and pink.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil and toss in the cherry tomatoes.
- Cook the tomatoes for about 5-7 minutes, stirring occasionally, until blistered and bursting.
- Add the white beans to the skillet and stir well, cooking for an additional 2-3 minutes until warmed through.
- Return the shrimp to the pan, drizzle with fresh lemon juice, and gently combine all ingredients.
- Remove from heat, sprinkle with chopped parsley, and serve immediately.
Notes
- For a richer flavor, consider mashing a portion of the white beans before adding them to the skillet.
- A splash of white wine can enhance the dish; add it after the tomatoes are cooked and let it reduce slightly before incorporating the beans and shrimp.
