Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 can (15 ounces) white beans (cannellini or great northern), drained and rinsed
  • 1 pint cherry tomatoes
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and red pepper flakes (if using) and sauté for about a minute until aromatic and golden.
  3. Introduce the shrimp to the skillet, seasoning them with salt and pepper.
  4. Cook the shrimp for approximately 2-3 minutes on each side until fully cooked and pink.
  5. Remove the shrimp from the skillet and set aside.
  6. In the same skillet, add the remaining 2 tablespoons of olive oil and toss in the cherry tomatoes.
  7. Cook the tomatoes for about 5-7 minutes, stirring occasionally, until blistered and bursting.
  8. Add the white beans to the skillet and stir well, cooking for an additional 2-3 minutes until warmed through.
  9. Return the shrimp to the pan, drizzle with fresh lemon juice, and gently combine all ingredients.
  10. Remove from heat, sprinkle with chopped parsley, and serve immediately.

Notes

  • For a richer flavor, consider mashing a portion of the white beans before adding them to the skillet.
  • A splash of white wine can enhance the dish; add it after the tomatoes are cooked and let it reduce slightly before incorporating the beans and shrimp.
