Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1 tablespoon matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the flour, shredded coconut, matcha powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Stir until just combined; do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add 1/4 cup of chocolate chips or nuts to the batter.
  • To make these muffins gluten-free, substitute all-purpose flour with a gluten-free flour blend.
