- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, powdered sugar, salt, and baking powder. Mix well.
- In a separate bowl, whisk together the egg, lemon zest, lemon juice, and vanilla extract until fully combined.
- Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.
- Using a tablespoon, scoop the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust the cookies with powdered sugar before serving.
Notes
- For a more intense lemon flavor, increase the lemon zest to 2 tablespoons.
