- 3 cups almond flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cloves

- 1 cup maple syrup
- 1/2 cup unsweetened applesauce
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup brewed chai tea (cooled)
Instructions
- Preheat the oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, whisk together the almond flour, baking soda, cinnamon, ginger, cardamom, cloves, and salt until well combined.
- In another bowl, mix the maple syrup, applesauce, eggs, vanilla extract, and cooled chai tea until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For a richer flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
- Serve with a dollop of whipped coconut cream for a delicious topping.
- To make it more festive, sprinkle with powdered sugar or drizzle with a simple icing made from powdered sugar and chai tea.
