A delightful Flourless Black Cocoa and Chia Greek Yogurt Cake that is rich in flavor and easy to make.

- 1 cup black cocoa powder
- 1 cup Greek yogurt (plain, non-fat or full-fat)
- 1/2 cup honey or maple syrup
- 1/4 cup chia seeds
- 1/2 cup unsweetened applesauce
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.
- In a large mixing bowl, combine the black cocoa powder, Greek yogurt, honey (or maple syrup), chia seeds, applesauce, eggs, vanilla extract, baking soda, and salt. Mix until well combined and smooth.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.
- Once cooled, slice and serve. This cake can be enjoyed plain or topped with fresh berries or a dollop of whipped cream.
Notes
- For a richer flavor, consider adding a teaspoon of espresso powder to the batter.
- To make it more decadent, top the cake with a chocolate ganache made from melted dark chocolate and a splash of cream.
