Instructions

  1. Rinse the uncooked rice under cold water until the water runs clear.
  2. In a medium pot, combine the rice with the water and sea salt. Bring to a vigorous boil, then lower the heat, cover, and let it simmer for about 15 minutes until the rice is soft and the water has evaporated.
  3. In a separate saucepan, gently heat the milk and unsalted butter over medium heat until the butter is fully melted. Stir in the cooked rice, mixing thoroughly. Remove from heat and allow the mixture to cool down for a few minutes.
  4. Once the rice mixture is at room temperature, add the beaten egg and vanilla extract, stirring until everything is well blended.
  5. In a large bowl, whisk together the flour, baking powder, and fine salt. Gradually pour in the ice-cold water, mixing until a soft dough forms. Transfer the dough to a floured surface and knead gently for a few minutes until it becomes smooth and elastic.
  6. Preheat your oven to 400°F (200°C).
  7. Divide the dough into 12 equal portions. Roll each portion into a circle about 6 inches in diameter, ensuring the edges are slightly thinner than the center.
  8. Spoon a generous amount of the rice filling into the center of each dough circle. Carefully fold the dough over to create a half-moon shape, pressing the edges firmly to seal.
  9. Arrange the filled pasties on a baking sheet lined with parchment paper. Brush the tops with the whisked egg for a beautiful golden finish.
  10. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crisp. Allow to cool for a few minutes before enjoying.
