- 1 cup lump crab meat, picked over for shells
- 1 cup heavy cream
- 1/2 cup whole milk
- 3 large egg yolks
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh chives
- 2 tablespoons granulated sugar (for topping)
Instructions
- Preheat your oven to 325°F (163°C). Prepare a baking dish by placing it in the oven to warm.
- In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until just simmering, then remove from heat.
- In a mixing bowl, whisk together the egg yolks, salt, black pepper, cayenne pepper (if using), and lemon juice until well combined.
- Gradually pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.
- Gently fold in the lump crab meat and chopped chives until evenly distributed.
- Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.
- Carefully pour the crab mixture into individual ramekins, filling them about three-quarters full.
- Place the ramekins in the warm baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 25-30 minutes, or until the brulees are set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle 1 teaspoon of granulated sugar evenly over the top of each brulee. Use a kitchen torch to caramelize the sugar until golden and crispy. If you don’t have a torch, broil the brulees in the oven for 1-2 minutes, watching closely to avoid burning.
Notes
- For a twist, add a teaspoon of Old Bay seasoning to the crab mixture for extra flavor.
- Substitute crab meat with lobster or shrimp for a different seafood experience.
