- 6 egg yolks
- 2 cups beef tallow
Instructions
- Preheat your oven to 200°F (93°C).
- In a small saucepan, melt the beef tallow over low heat until liquid.
- In a baking dish, gently place the egg yolks.
- Pour the melted tallow over the egg yolks until they are completely submerged.
- Cover the dish with foil and place it in the preheated oven.
- Bake for about 2 hours, until the yolks are firm to the touch.
- Remove from the oven and allow to cool.
- Store in the refrigerator, covered with tallow.
Notes
- Use pasteurized egg yolks for safety.
- This confit can last for several weeks when stored properly.
