Delicious and guilt-free Egg White & Pumpkin Keto Donuts that are perfect for a low-carb diet.

- 1 cup egg whites (about 8 large eggs)
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or oil.
- In a large mixing bowl, combine the egg whites and pumpkin puree. Whisk until well blended.
- In a separate bowl, mix together the almond flour, coconut flour, erythritol, baking powder, pumpkin pie spice, salt, and cinnamon if using.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 15-18 minutes or until the donuts are set and a toothpick inserted into the center comes out clean.
- Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
- Top the cooled donuts with a sugar-free glaze made from powdered erythritol mixed with a little almond milk for added sweetness.
