Ingredients

  • 1 pound ground pork (or ground turkey for a lighter option)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon onion powder
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 1 cup snap peas, trimmed and halved
  • 1/4 cup green onions, chopped
  • 1/4 cup chopped cilantro (optional)
  • 1/2 cup crispy chow mein noodles (for crunch)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add the ground pork (or turkey) and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  2. Stir in the soy sauce, rice vinegar, garlic powder, ginger powder, onion powder, salt, and pepper. Cook for another 2 minutes to combine the flavors.
  3. Add the coleslaw mix and snap peas to the skillet. Stir well and cook for about 3-5 minutes, until the vegetables are tender but still crisp.
  4. Remove from heat and stir in the green onions and cilantro if using.
  5. Serve hot, topped with crispy chow mein noodles for extra crunch.
