- 1 pound ground pork (or ground turkey for a lighter option)
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 teaspoon onion powder
- 4 cups coleslaw mix (shredded cabbage and carrots)
- 1 cup snap peas, trimmed and halved
- 1/4 cup green onions, chopped
- 1/4 cup chopped cilantro (optional)
- 1/2 cup crispy chow mein noodles (for crunch)
- Salt and pepper to taste
Instructions
- In a large skillet, heat the sesame oil over medium heat. Add the ground pork (or turkey) and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the soy sauce, rice vinegar, garlic powder, ginger powder, onion powder, salt, and pepper. Cook for another 2 minutes to combine the flavors.
- Add the coleslaw mix and snap peas to the skillet. Stir well and cook for about 3-5 minutes, until the vegetables are tender but still crisp.
- Remove from heat and stir in the green onions and cilantro if using.
- Serve hot, topped with crispy chow mein noodles for extra crunch.
Notes
- For a vegetarian option, substitute the ground meat with crumbled tofu or tempeh.
- Add a splash of sriracha or your favorite hot sauce for a spicy kick.
