- 1 cup strong brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- 1 cup coconut cream (chilled)
- 1 cup silken tofu, drained
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 package (7 oz) vegan ladyfinger cookies
- 2 tablespoons cocoa powder
- Dark chocolate shavings (for garnish, optional)
Instructions
- In a shallow dish, combine the cooled brewed coffee and coffee liqueur (if using). Set aside.
- In a blender or food processor, combine the chilled coconut cream, silken tofu, powdered sugar, vanilla extract, and almond extract. Blend until smooth and creamy.
- Quickly dip each vegan ladyfinger cookie into the coffee mixture, ensuring they are soaked but not soggy. Lay them in a single layer at the bottom of a 9×9-inch dish.
- Spread half of the creamy mixture over the layer of ladyfingers. Repeat the process with another layer of dipped ladyfingers and top with the remaining creamy mixture.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings if desired.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the creamy mixture before blending.
- Substitute the coffee with chai tea or matcha for a different flavor profile.
