- 1 cup pomegranate juice
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons apple cider vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup pomegranate seeds (for garnish)
- 2 green onions, sliced (for garnish)
Instructions
- In a large bowl, whisk together pomegranate juice, honey, soy sauce, apple cider vinegar, minced garlic, ground ginger, and black pepper until well combined.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Remove chicken from the marinade, reserving the marinade for later. Sear the chicken thighs for about 3-4 minutes on each side until golden brown.
- Pour the reserved marinade over the chicken in the skillet. Bring to a simmer, then transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with pomegranate seeds and sliced green onions before serving.
