  • 1 cup pomegranate juice
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup pomegranate seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large bowl, whisk together pomegranate juice, honey, soy sauce, apple cider vinegar, minced garlic, ground ginger, and black pepper until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat your oven to 400°F (200°C).
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Remove chicken from the marinade, reserving the marinade for later. Sear the chicken thighs for about 3-4 minutes on each side until golden brown.
  5. Pour the reserved marinade over the chicken in the skillet. Bring to a simmer, then transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with pomegranate seeds and sliced green onions before serving.
