Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter
- 1/2 cup protein powder (vanilla or unflavored)
- 1/2 cup fresh raspberries, mashed
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup shredded coconut (optional)
Instructions
- Mash the fresh raspberries in a bowl until smooth.
- In a separate large bowl, combine the rolled oats, almond butter, protein powder, honey or maple syrup, salt, and vanilla extract.
- Stir the mixture thoroughly until it achieves a uniform consistency.
- Gently fold in the mashed raspberries and, if desired, the shredded coconut.
- Take small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter.
- Arrange the energy bites on a parchment-lined baking sheet.
- Chill them in the refrigerator for about 30 minutes to allow them to set.
- After they have firmed up, transfer the bites to an airtight container for storage, keeping them in the fridge for up to a week.
Notes
- For a chocolate variation, replace half of the almond butter with chocolate hazelnut spread.
- Mix in a tablespoon of chia seeds or flaxseeds to boost fiber and omega-3 content.
