Easy Raspberry Protein Balls are a delicious and nutritious snack that provides a quick energy boost.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 cup fresh raspberries, mashed
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional)

Instructions

  1. Mash the fresh raspberries in a bowl until smooth.
  2. In a separate large bowl, combine the rolled oats, almond butter, protein powder, honey or maple syrup, salt, and vanilla extract.
  3. Stir the mixture thoroughly until it achieves a uniform consistency.
  4. Gently fold in the mashed raspberries and, if desired, the shredded coconut.
  5. Take small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter.
  6. Arrange the energy bites on a parchment-lined baking sheet.
  7. Chill them in the refrigerator for about 30 minutes to allow them to set.
  8. After they have firmed up, transfer the bites to an airtight container for storage, keeping them in the fridge for up to a week.

Notes

  • For a chocolate variation, replace half of the almond butter with chocolate hazelnut spread.
  • Mix in a tablespoon of chia seeds or flaxseeds to boost fiber and omega-3 content.
