Description

A light and quick version of the classic tartiflette, perfect for a tasty dinner.


Ingredients

  • 2 medium potatoes, peeled and thinly sliced
  • 1 cup cooked chicken breast, shredded
  • 1 cup low-fat crème fraîche
  • 1 cup low-fat cheese, shredded (such as Gruyère or Swiss)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 cup vegetable or chicken broth

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. In a large bowl, combine the sliced potatoes, shredded chicken, cooked onion and garlic, crème fraîche, thyme, salt, and pepper. Mix well to combine.
  4. Spread half of the potato mixture evenly in a greased 9×13-inch baking dish. Pour half of the broth over the layer.
  5. Add the remaining potato mixture on top and pour the rest of the broth over it. Sprinkle the shredded cheese evenly on top.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the potatoes are tender.
  7. Let the tartiflette cool for about 5 minutes before serving.

Notes

  • For added flavor, consider using smoked chicken for a deeper taste.
  • You can also substitute the potatoes with sweet potatoes for a healthier twist.
