- 1 pound fresh strawberries, hulled and chopped
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup whipped cream (store-bought or homemade)
- 1/2 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish.
- In a medium bowl, combine the chopped strawberries with 1 tablespoon of granulated sugar. Set aside to macerate for about 10 minutes.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, buttermilk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the macerated strawberries.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, crumble the cake into a large bowl. Add the whipped cream and mix until well combined.
- Using your hands, form the mixture into small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Freeze the truffles for at least 30 minutes to firm up.
- After freezing, dust the truffles with powdered sugar before serving.
Notes
- For a chocolate twist, add 1/4 cup of cocoa powder to the dry ingredients and substitute chocolate whipped cream for a richer flavor.
- Try using other berries like blueberries or raspberries for a mixed berry truffle variation.
