Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (store-bought or homemade)
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish.
  2. In a medium bowl, combine the chopped strawberries with 1 tablespoon of granulated sugar. Set aside to macerate for about 10 minutes.
  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  4. In another bowl, mix the melted butter, buttermilk, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the macerated strawberries.
  6. Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once cooled, crumble the cake into a large bowl. Add the whipped cream and mix until well combined.
  9. Using your hands, form the mixture into small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  10. Freeze the truffles for at least 30 minutes to firm up.
  11. After freezing, dust the truffles with powdered sugar before serving.

Notes

  • For a chocolate twist, add 1/4 cup of cocoa powder to the dry ingredients and substitute chocolate whipped cream for a richer flavor.
