Ingredients

  • 2 ripe mangoes, peeled and diced (about 2 cups)
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup unsalted butter, cut into small pieces
  • Pinch of salt

Instructions

  1. In a blender, combine the diced mangoes and sugar. Blend until smooth and well combined.
  2. In a medium saucepan, whisk together the mango puree, eggs, lime juice, and salt until fully incorporated.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Do not let it boil.
  4. Remove the saucepan from heat and stir in the butter until fully melted and incorporated.
  5. Pour the mango curd through a fine-mesh strainer into a clean bowl to remove any lumps.
  6. Allow the curd to cool to room temperature, then cover and refrigerate for at least 2 hours before serving.

Notes

  • For a tropical twist, add a teaspoon of grated fresh ginger to the mango puree before cooking.
  • This mango curd can be used as a filling for pastries, a topping for yogurt, or simply enjoyed on toast.
