- 2 ripe mangoes, peeled and diced (about 2 cups)
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup unsalted butter, cut into small pieces
- Pinch of salt
Instructions
- In a blender, combine the diced mangoes and sugar. Blend until smooth and well combined.
- In a medium saucepan, whisk together the mango puree, eggs, lime juice, and salt until fully incorporated.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Do not let it boil.
- Remove the saucepan from heat and stir in the butter until fully melted and incorporated.
- Pour the mango curd through a fine-mesh strainer into a clean bowl to remove any lumps.
- Allow the curd to cool to room temperature, then cover and refrigerate for at least 2 hours before serving.
Notes
- For a tropical twist, add a teaspoon of grated fresh ginger to the mango puree before cooking.
- This mango curd can be used as a filling for pastries, a topping for yogurt, or simply enjoyed on toast.
