Ingredients

  • 2 tablespoons olive oil
  • 1 pound duck legs, skin-on
  • 1 pound pork shoulder, cut into 1-inch cubes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup chicken broth
  • 1 cup dry white wine
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 can (15 ounces) white beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large Dutch oven, heat the olive oil over medium-high heat. Season the duck legs with salt and pepper, then add them to the pot, skin-side down. Sear until the skin is crispy and browned, about 5-7 minutes. Flip and brown the other side for another 5 minutes. Remove the duck legs and set aside.
  2. In the same pot, add the pork shoulder cubes and brown on all sides, about 5-7 minutes. Remove and set aside with the duck.
  3. Add the onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
  4. Stir in the diced tomatoes, chicken broth, white wine, thyme, rosemary, and bay leaf. Bring to a simmer.
  5. Return the duck and pork to the pot. Add the white beans and stir to combine. Bring to a gentle simmer, then cover and reduce heat to low. Cook for 1.5 to 2 hours, stirring occasionally, until the meats are tender and the flavors meld.
  6. Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier version, add a pinch of red pepper flakes during the vegetable sauté.
  • If you prefer a vegetarian option, substitute the duck and pork with additional beans and vegetables like zucchini and bell peppers.
