- 2 tablespoons olive oil
- 1 pound duck legs, skin-on
- 1 pound pork shoulder, cut into 1-inch cubes
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup chicken broth
- 1 cup dry white wine
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 1 can (15 ounces) white beans, drained and rinsed
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the duck legs with salt and pepper, then add them to the pot, skin-side down. Sear until the skin is crispy and browned, about 5-7 minutes. Flip and brown the other side for another 5 minutes. Remove the duck legs and set aside.
- In the same pot, add the pork shoulder cubes and brown on all sides, about 5-7 minutes. Remove and set aside with the duck.
- Add the onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the diced tomatoes, chicken broth, white wine, thyme, rosemary, and bay leaf. Bring to a simmer.
- Return the duck and pork to the pot. Add the white beans and stir to combine. Bring to a gentle simmer, then cover and reduce heat to low. Cook for 1.5 to 2 hours, stirring occasionally, until the meats are tender and the flavors meld.
- Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier version, add a pinch of red pepper flakes during the vegetable sauté.
- If you prefer a vegetarian option, substitute the duck and pork with additional beans and vegetables like zucchini and bell peppers.
