  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted pistachios, chopped
  • 1/4 cup sugar-free dark chocolate chips
  • For the lava filling:
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large bowl, mix together the almond flour, cocoa powder, baking powder, salt, and granulated erythritol until well combined.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped pistachios and dark chocolate chips.
  6. In a separate bowl, prepare the lava filling by mixing the softened cream cheese, powdered erythritol, cocoa powder, and vanilla extract until smooth and creamy.
  7. Pour half of the batter into the prepared baking pan and spread it evenly.
  8. Spoon the lava filling over the batter, then top with the remaining batter, spreading it gently to cover the filling.
  9. Bake for 20-25 minutes, or until the edges are set but the center is still slightly soft.
  10. Remove from the oven and let cool in the pan for about 10 minutes before slicing into bars.
  11. For the best texture, chill the bars in the refrigerator for at least 1 hour before serving.
