- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated erythritol (or preferred keto sweetener)
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsalted pistachios, chopped
- 1/4 cup sugar-free dark chocolate chips
- For the lava filling:
- 1/2 cup cream cheese, softened
- 1/4 cup powdered erythritol
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a large bowl, mix together the almond flour, cocoa powder, baking powder, salt, and granulated erythritol until well combined.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chopped pistachios and dark chocolate chips.
- In a separate bowl, prepare the lava filling by mixing the softened cream cheese, powdered erythritol, cocoa powder, and vanilla extract until smooth and creamy.
- Pour half of the batter into the prepared baking pan and spread it evenly.
- Spoon the lava filling over the batter, then top with the remaining batter, spreading it gently to cover the filling.
- Bake for 20-25 minutes, or until the edges are set but the center is still slightly soft.
- Remove from the oven and let cool in the pan for about 10 minutes before slicing into bars.
- For the best texture, chill the bars in the refrigerator for at least 1 hour before serving.
Notes
- For a nut-free version, substitute almond flour with sunflower seed flour.
- Add a pinch of cardamom to the batter for a unique flavor twist reminiscent of Middle Eastern desserts.
