- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup erythritol (or preferred keto sweetener)
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar-free dark chocolate chips
- 1/4 cup chopped nuts (optional, such as almonds or pecans)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, and salt. Mix well until there are no clumps.
- Add the melted coconut oil, almond milk, and vanilla extract to the dry ingredients. Stir until the mixture is smooth and well combined.
- Fold in the sugar-free dark chocolate chips and chopped nuts, if using.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack.
- Once cooled, cut into squares and enjoy!
Notes
- For a minty twist, add 1/2 teaspoon of peppermint extract to the batter before baking.
- To make these bars even more decadent, drizzle melted sugar-free chocolate over the top after they have cooled.
