Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol (or preferred keto sweetener)
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free dark chocolate chips
  • 1/4 cup chopped nuts (optional, such as almonds or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, and salt. Mix well until there are no clumps.
  3. Add the melted coconut oil, almond milk, and vanilla extract to the dry ingredients. Stir until the mixture is smooth and well combined.
  4. Fold in the sugar-free dark chocolate chips and chopped nuts, if using.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack.
  8. Once cooled, cut into squares and enjoy!

Notes

  • For a minty twist, add 1/2 teaspoon of peppermint extract to the batter before baking.
  • To make these bars even more decadent, drizzle melted sugar-free chocolate over the top after they have cooled.
