A rich and flavorful broth infused with the essence of driftwood-smoked mussels.


Ingredients

  • 2 cups mussels, cleaned
  • 4 cups fish stock
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 2 tablespoons olive oil
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1/2 cup white wine
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, and carrot, sautéing until softened.
  3. Pour in the white wine and cook for 2 minutes.
  4. Add fish stock, bay leaf, and thyme, bringing to a simmer.
  5. Add mussels and cover, cooking until they open, about 5 minutes.
  6. Remove from heat and discard any mussels that did not open.
  7. Stir in fresh parsley before serving.

  • Serving suggestion: Serve with crusty bread for dipping.
