A rich and flavorful broth infused with the essence of driftwood-smoked mussels.
Ingredients

- 2 cups mussels, cleaned
- 4 cups fish stock
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 2 tablespoons olive oil
- 1 bay leaf
- 1 teaspoon thyme
- 1/2 cup white wine
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, and carrot, sautéing until softened.
- Pour in the white wine and cook for 2 minutes.
- Add fish stock, bay leaf, and thyme, bringing to a simmer.
- Add mussels and cover, cooking until they open, about 5 minutes.
- Remove from heat and discard any mussels that did not open.
- Stir in fresh parsley before serving.
Notes
- Serving suggestion: Serve with crusty bread for dipping.
- Can substitute seafood stock if preferred.
