Ingredients

- 1 pound salmon belly
- 1/4 cup brown sugar
- 1/4 cup kosher salt
- 2 tablespoons black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
Instructions
- Combine brown sugar, kosher salt, black pepper, garlic powder, onion powder, and smoked paprika in a bowl.
- Rub the mixture all over the salmon belly.
- Wrap the salmon in plastic wrap and refrigerate for 12-24 hours.
- Rinse the salmon under cool water and pat dry.
- Smoke the salmon in a smoker at 180°F for 1-3 hours, until it reaches your desired level of smokiness.
- Cool the salmon before slicing and serving.

- Make sure to use high-quality salmon for the best flavor.
- If you don’t have a smoker, you can use a stovetop smoking method.
