Ingredients

- 2 cups rolled oats
- 1 cup sunflower seeds
- 1 cup pumpkin seeds
- 1/2 cup honey
- 1/4 cup coconut oil
- 1/2 cup dried fruit (raisins, cranberries, etc.)
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the oats, sunflower seeds, pumpkin seeds, and salt.
- In a small saucepan, melt the honey and coconut oil over low heat, then stir in the vanilla extract.
- Pour the melted mixture over the dry ingredients and stir until well combined.
- Spread the mixture evenly onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and allow to cool, then mix in the dried fruit.
- Break into clusters and store in an airtight container.
Notes
- For added flavor, consider adding spices like cinnamon or nutmeg.
- This granola can be stored for up to two weeks.
