- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 ½ cups cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup pureed dragon fruit (about 1 medium dragon fruit)
- 1 tablespoon lemon juice
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.
- In a large mixing bowl, beat the softened cream cheese with ½ cup of granulated sugar and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pureed dragon fruit and lemon juice until fully incorporated.
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove from the oven and refrigerate for at least 4 hours or overnight.
- Before serving, whip the heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
- Spread or pipe the whipped cream on top of the chilled cheesecake.
Notes
- For a tropical twist, consider adding a layer of fresh fruit on top, such as sliced kiwi or mango.
- You can substitute the dragon fruit puree with other fruit purees like raspberry or passion fruit for different flavors.
