Description

A unique and delicious Dragon Fruit Cheesecake recipe that combines the creamy texture of cheesecake with the tropical flavor of dragon fruit.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 ½ cups cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup pureed dragon fruit (about 1 medium dragon fruit)
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with ½ cup of granulated sugar and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the pureed dragon fruit and lemon juice until fully incorporated.
  7. Pour the cream cheese mixture over the cooled crust in the springform pan.
  8. Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  10. Remove from the oven and refrigerate for at least 4 hours or overnight.
  11. Before serving, whip the heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
  12. Spread or pipe the whipped cream on top of the chilled cheesecake.

  • For a tropical twist, consider adding a layer of fresh fruit on top, such as sliced kiwi or mango.
