- 2 medium cucumbers
- 1/4 cup rice vinegar

- 1/4 cup fresh dill, chopped
- 1/4 cup onions, thinly sliced
Instructions
- Using a vegetable peeler, slice the cucumbers into thin ribbons.
- In a bowl, whisk together rice vinegar, olive oil, sugar, salt, and black pepper.
- Add cucumber ribbons, dill, and onions to the dressing and toss to combine.
- Let marinate for at least 30 minutes before serving.
