Enjoy a guilt-free snack with these delicious red lentil crackers, perfect for any occasion.


Ingredients

  • 1 cup red lentils, thoroughly rinsed
  • 1 ½ cups water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • Optional: a sprinkle of sesame seeds or flaxseeds for garnish

Instructions

  1. In a saucepan, combine the rinsed red lentils with water and bring to a vigorous boil over medium-high heat.
  2. Once boiling, reduce the heat and let it simmer gently for 15-20 minutes, stirring occasionally, until the lentils are tender and most of the water has been absorbed.
  3. After cooking, take the saucepan off the heat and allow the lentils to cool for a few minutes.
  4. Transfer the lentils to a blender or food processor and add in the garlic powder, onion powder, sea salt, cumin, smoked paprika, black pepper, and olive oil.
  5. Blend until you achieve a smooth, creamy consistency.
  6. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  7. Pour the lentil mixture onto the baking sheet and spread it out evenly, aiming for a thickness of about ¼ inch.
  8. If you like, sprinkle sesame seeds or flaxseeds over the top for an extra crunch.
  9. Place the baking sheet in the oven and bake for 25-30 minutes, or until the edges turn a lovely golden brown and the center feels firm to the touch.
  10. Once done, take it out and let it cool for a few minutes before slicing it into your preferred shapes.
  11. Allow the crisps to cool completely on a wire rack.
  12. Store any leftovers in a sealed container at room temperature for up to a week.

Notes

  • For an extra kick, feel free to mix in a dash of cayenne pepper or chili powder before blending.
  • You can also play around with various herbs or nutritional yeast to tailor the flavor to your preference.
