Instructions
- Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and white sugar together until creamy and airy, about 3-4 minutes.
- Incorporate the egg, vanilla extract, and rose essence, mixing until well blended.
- In another bowl, combine the flour, baking powder, and sea salt.
- Gradually fold the dry mixture into the butter mixture, stirring gently until just combined.
- Carefully add the chopped raspberries, folding them in to maintain their shape.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spaced about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies are golden around the edges.
- Allow them to cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely.
- Once cooled, lightly dust with powdered sugar for a sweet finish.
