Description

A simple and healthy recipe for delicious and nourishing date and nut energy bars that are perfect for a quick snack or energy boost.


Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1/2 cup rolled oats
  • 1/4 cup nut butter (peanut, almond, or cashew)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. In a food processor, combine the pitted dates and mixed nuts. Pulse until the mixture is finely chopped and sticky.
  2. Add the rolled oats, nut butter, salt, and vanilla extract to the food processor. Pulse again until all ingredients are well combined and form a sticky dough.
  3. If using, fold in the dark chocolate chips by hand.
  4. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  5. Transfer the mixture into the prepared baking dish and press it down firmly and evenly using your hands or a spatula.
  6. Refrigerate for at least 1 hour to allow the bars to set.
  7. Once set, lift the mixture out of the dish using the parchment paper and cut it into bars or squares.
  8. Store the bars in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • For a protein boost, add 1/4 cup of protein powder to the mixture before blending.
  • Experiment with different nuts or seeds, such as pumpkin seeds or sunflower seeds, for varied flavors and textures.
