A simple and healthy recipe for delicious and nourishing date and nut energy bars that are perfect for a quick snack or energy boost.
Ingredients

- 1 cup pitted Medjool dates
- 1 cup mixed nuts (almonds, walnuts, cashews)
- 1/2 cup rolled oats
- 1/4 cup nut butter (peanut, almond, or cashew)
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup dark chocolate chips (optional)
Instructions
- In a food processor, combine the pitted dates and mixed nuts. Pulse until the mixture is finely chopped and sticky.
- Add the rolled oats, nut butter, salt, and vanilla extract to the food processor. Pulse again until all ingredients are well combined and form a sticky dough.
- If using, fold in the dark chocolate chips by hand.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Transfer the mixture into the prepared baking dish and press it down firmly and evenly using your hands or a spatula.
- Refrigerate for at least 1 hour to allow the bars to set.
- Once set, lift the mixture out of the dish using the parchment paper and cut it into bars or squares.
- Store the bars in an airtight container in the refrigerator for up to 2 weeks.
Notes
- For a protein boost, add 1/4 cup of protein powder to the mixture before blending.
- Experiment with different nuts or seeds, such as pumpkin seeds or sunflower seeds, for varied flavors and textures.
