  • 1 pie crust (9-inch, store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese (such as Swiss or cheddar)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  3. Add the sliced mushrooms and cook for an additional 5-7 minutes until the mushrooms are tender and any liquid has evaporated. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg until well combined.
  5. Stir in the sautéed mushrooms and onions, followed by the shredded cheese.
  6. Pour the mixture into the pie crust, spreading it evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  8. Let the quiche cool for about 10 minutes before slicing. Garnish with fresh parsley if desired.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • You can also add cooked spinach or bell peppers for extra flavor and nutrition.
  • If you prefer a crustless quiche, simply grease a pie dish and pour the filling directly into it, adjusting the baking time as needed.
