- 1 pie crust (9-inch, store-bought or homemade)
- 1 tablespoon olive oil
- 1 small onion, diced
- 8 ounces mushrooms, sliced (such as cremini or button)
- 3 large eggs
- 1 cup heavy cream
- 1 cup shredded cheese (such as Swiss or cheddar)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 375°F.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
- Add the sliced mushrooms and cook for an additional 5-7 minutes until the mushrooms are tender and any liquid has evaporated. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg until well combined.
- Stir in the sautéed mushrooms and onions, followed by the shredded cheese.
- Pour the mixture into the pie crust, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Let the quiche cool for about 10 minutes before slicing. Garnish with fresh parsley if desired.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- You can also add cooked spinach or bell peppers for extra flavor and nutrition.
- If you prefer a crustless quiche, simply grease a pie dish and pour the filling directly into it, adjusting the baking time as needed.
