- 2 pounds lamb shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium carrots, sliced
- 3 medium potatoes, peeled and diced
- 2 cups beef or lamb broth
- 1 cup Guinness beer (or any stout)
- 2 tablespoons tomato paste
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes and brown them on all sides, about 5-7 minutes. Remove the lamb and set aside.
- In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Stir in the sliced carrots and diced potatoes, cooking for another 3-4 minutes.
- Return the browned lamb to the pot. Add the broth, Guinness beer, tomato paste, thyme, bay leaves, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the lamb is tender and the flavors meld together. Stir occasionally.
- Remove the bay leaves before serving. Garnish with chopped parsley and serve hot.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
- Feel free to add other vegetables like parsnips or peas for extra flavor and nutrition.
