Ingredients

Scale
  • 8 large eggs
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 4 slices of toasted French bread
  • 1 cup sautéed spinach (optional)
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, whisk together the eggs, heavy cream, Dijon mustard, salt, and black pepper until well combined.
  3. Grease a 9×13-inch baking dish with butter or cooking spray. Pour the egg mixture into the dish.
  4. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and a toothpick inserted in the center comes out clean.
  5. While the eggs are baking, prepare the toasted French bread and sauté the spinach if using.
  6. Once the eggs are done, remove them from the oven and let them cool for a few minutes.
  7. Cut the baked egg mixture into squares or rectangles.
  8. To assemble, place a slice of toasted French bread on each plate, top with a portion of the baked eggs, and sprinkle with sautéed spinach if desired.
  9. Finish with a sprinkle of grated Parmesan cheese and garnish with chopped chives and parsley.

Notes

  • For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce to the egg mixture before baking.
  • You can customize this dish by adding cooked bacon, ham, or diced vegetables like bell peppers or mushrooms to the egg mixture before baking.
