- 8 large eggs
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
- 4 slices of toasted French bread
- 1 cup sautéed spinach (optional)
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, whisk together the eggs, heavy cream, Dijon mustard, salt, and black pepper until well combined.
- Grease a 9×13-inch baking dish with butter or cooking spray. Pour the egg mixture into the dish.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and a toothpick inserted in the center comes out clean.
- While the eggs are baking, prepare the toasted French bread and sauté the spinach if using.
- Once the eggs are done, remove them from the oven and let them cool for a few minutes.
- Cut the baked egg mixture into squares or rectangles.
- To assemble, place a slice of toasted French bread on each plate, top with a portion of the baked eggs, and sprinkle with sautéed spinach if desired.
- Finish with a sprinkle of grated Parmesan cheese and garnish with chopped chives and parsley.
Notes
- For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce to the egg mixture before baking.
