Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup guava puree (fresh or canned)
  • 1 teaspoon guava extract (optional)
  • 1 cup shredded coconut
  • 8 ounces cream cheese, softened (for frosting)
  • ½ cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 cup shredded coconut (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter, milk, eggs, vanilla extract, guava puree, and guava extract (if using). Beat on medium speed for about 2-3 minutes until the batter is smooth and well combined.
  4. Fold in the shredded coconut gently with a spatula until evenly distributed.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. While the cakes are cooling, prepare the frosting by beating the softened cream cheese and butter together until creamy.
  9. Gradually add the powdered sugar, milk, and vanilla extract, mixing until smooth and fluffy.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top.
  11. Frost the top and sides of the cake with the remaining frosting.
  12. Sprinkle the shredded coconut on top of the frosted cake for decoration.

Notes

  • This recipe serves 12.
  • For a tropical twist, add diced fresh pineapple to the batter before baking.
  • For a lighter version, substitute half of the butter with unsweetened applesauce.
