- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup guava puree (fresh or canned)
- 1 teaspoon guava extract (optional)
- 1 cup shredded coconut
- 8 ounces cream cheese, softened (for frosting)
- ½ cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar (for frosting)
- 2 tablespoons milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 1 cup shredded coconut (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the softened butter, milk, eggs, vanilla extract, guava puree, and guava extract (if using). Beat on medium speed for about 2-3 minutes until the batter is smooth and well combined.
- Fold in the shredded coconut gently with a spatula until evenly distributed.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- While the cakes are cooling, prepare the frosting by beating the softened cream cheese and butter together until creamy.
- Gradually add the powdered sugar, milk, and vanilla extract, mixing until smooth and fluffy.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top.
- Frost the top and sides of the cake with the remaining frosting.
- Sprinkle the shredded coconut on top of the frosted cake for decoration.
Notes
- This recipe serves 12.
- For a tropical twist, add diced fresh pineapple to the batter before baking.
- For a lighter version, substitute half of the butter with unsweetened applesauce.
