- 1 pound ground beef (or turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (about 1 ounce)
- 1 can (15 ounces) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 cup heavy cream
- 1 cup bell pepper, diced (any color)
- 1 cup spinach, chopped
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
- Sour cream, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or baking dish.
- In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
- Add the minced garlic and taco seasoning to the skillet, stirring to combine. Cook for an additional 2 minutes until fragrant.
- Stir in the drained diced tomatoes, bell pepper, and chopped spinach. Cook for another 3-4 minutes until the vegetables are slightly tender. Season with salt and pepper to taste.
- In a separate bowl, whisk together the eggs and heavy cream until well combined.
- Spread the meat and vegetable mixture evenly in the prepared pie dish. Pour the egg and cream mixture over the top, then sprinkle with shredded cheddar cheese.
- Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
- Allow the pie to cool for 5-10 minutes before slicing. Garnish with fresh cilantro and serve with sour cream if desired.
