  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (15 ounces) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup bell pepper, diced (any color)
  • 1 cup spinach, chopped
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or baking dish.
  2. In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
  3. Add the minced garlic and taco seasoning to the skillet, stirring to combine. Cook for an additional 2 minutes until fragrant.
  4. Stir in the drained diced tomatoes, bell pepper, and chopped spinach. Cook for another 3-4 minutes until the vegetables are slightly tender. Season with salt and pepper to taste.
  5. In a separate bowl, whisk together the eggs and heavy cream until well combined.
  6. Spread the meat and vegetable mixture evenly in the prepared pie dish. Pour the egg and cream mixture over the top, then sprinkle with shredded cheddar cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
  8. Allow the pie to cool for 5-10 minutes before slicing. Garnish with fresh cilantro and serve with sour cream if desired.
