Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 cup ricotta cheese
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 cup crushed cornflakes
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. In a large bowl, combine the drained spinach, ricotta cheese, sour cream, half of the mozzarella cheese, half of the Parmesan cheese, salt, black pepper, and nutmeg. Mix well until all ingredients are thoroughly combined.
  4. Add the sautéed onion and garlic to the spinach mixture and stir until evenly distributed.
  5. Pour the spinach mixture into the prepared baking dish and spread it out evenly.
  6. In a separate bowl, combine the crushed cornflakes with the melted butter. Stir until the cornflakes are well coated.
  7. Sprinkle the cornflake mixture evenly over the top of the spinach casserole.
  8. Top with the remaining mozzarella and Parmesan cheeses.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
  10. Let the casserole cool for about 5 minutes before serving.

Notes

  • For a spicier kick, add 1/4 teaspoon of red pepper flakes to the spinach mixture.
  • You can substitute fresh spinach for the frozen spinach; use about 1 pound of fresh spinach, sautéed until wilted and drained.
