A delicious and nutritious vegan dish combining crispy tofu with peanut sauce over rice.
Ingredients

- 1 cup jasmine rice
- 14 ounces firm tofu, pressed and cubed
- 2 tablespoons vegetable oil
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 cup chopped green onions
- 1/4 cup chopped peanuts
- 1/2 cup broccoli florets
- 1/2 cup bell pepper, sliced
Instructions
- Cook the jasmine rice according to package instructions.
- In a skillet, heat vegetable oil over medium-high heat. Add cubed tofu and cook until golden brown and crispy, about 10 minutes.
- In a separate bowl, mix peanut butter, soy sauce, maple syrup, rice vinegar, minced garlic, and red pepper flakes to make the sauce.
- Add the broccoli and bell pepper to the skillet and stir-fry for 3-4 minutes until tender.
- Pour the peanut sauce over the tofu and vegetables, stirring to combine.
- Serve the tofu mixture over the cooked rice and garnish with chopped green onions and peanuts.
Notes
- For extra crunch, you can double fry the tofu.
- Feel free to substitute vegetables based on your preference.
