A delicious and nutritious vegan dish combining crispy tofu with peanut sauce over rice.


Ingredients

  • 1 cup jasmine rice
  • 14 ounces firm tofu, pressed and cubed
  • 2 tablespoons vegetable oil
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1/2 cup broccoli florets
  • 1/2 cup bell pepper, sliced

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a skillet, heat vegetable oil over medium-high heat. Add cubed tofu and cook until golden brown and crispy, about 10 minutes.
  3. In a separate bowl, mix peanut butter, soy sauce, maple syrup, rice vinegar, minced garlic, and red pepper flakes to make the sauce.
  4. Add the broccoli and bell pepper to the skillet and stir-fry for 3-4 minutes until tender.
  5. Pour the peanut sauce over the tofu and vegetables, stirring to combine.
  6. Serve the tofu mixture over the cooked rice and garnish with chopped green onions and peanuts.

Notes

  • For extra crunch, you can double fry the tofu.
  • Feel free to substitute vegetables based on your preference.
