- 2 cans chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 4 pita breads
- 1 cup tzatziki sauce
- 1 cup lettuce, shredded
- 1 tomato, diced
- 1/2 red onion, thinly sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
- Spread chickpeas on a baking sheet and roast for 25-30 minutes until crispy.
- Warm the pita breads in the oven for a few minutes.
- Assemble the gyros by adding crispy chickpeas, tzatziki, lettuce, tomato, and onion to the pitas.
- Serve immediately and enjoy!
