Ingredients

  • 1 pound chicken gizzards
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • oil for frying

Instructions

  1. Rinse the chicken gizzards and place them in a bowl with buttermilk. Let it marinate for at least 1 hour.
  2. In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  4. Drain the gizzards from the buttermilk and dredge them in the flour mixture, shaking off the excess.
  5. Fry gizzards in batches until golden brown and crispy, about 5-7 minutes.
  6. Transfer to a plate lined with paper towels to drain excess oil.
  7. Serve hot with your favorite dipping sauce.
